What inspectors found at The Spice Kitchen, Nawaabs, Brown Bear and Bahar Cafe

HYDERABAD: The Cyberabad Municipal Corporation (CMC) Food Safety teams conducted inspections at four food establishments on June 18, 2026, and found multiple food safety and hygiene violations, including cockroach infestations, stale food storage, poor sanitation and inadequate food labelling.
The inspections were carried out as part of a routine drive aimed at strengthening food safety standards across Cyberabad.
At The Spice Kitchen, located in PNR Empire, inspectors found a heavy cockroach infestation in the kitchen, freezer and storage areas. Grain pests were detected in stored food items, while stale food was found in freezers. Officials also noted the absence of proper food labelling, wrapping and date marking. Raw chicken was stored without wrapping, and vegetarian and non-vegetarian food items were kept together. Damaged flooring and poor sanitation near the wash area were also observed.
Food handlers at the establishment were using hairnets and aprons. The outlet scored 60 out of 108 in the hygiene assessment, equivalent to 56%. CMC said an Improvement Notice would be issued and directed the management to immediately address pest control, sanitation and food storage deficiencies.

Stale food and hygiene issues found
At Nawaabs Restaurant in Anjaiah Nagar, inspectors observed proper segregation of vegetarian and non-vegetarian food items, appropriate wrapping of raw meat, use of colour-coded chopping boards and no use of synthetic colours.
However, stale food items, including meat, rice, noodles and chicken preparations, were found stored in freezers. The inspection also revealed improper butchering practices, water stagnation, slippery floors, lack of hot-water sanitation facilities for utensils and poor freezer hygiene. Medical fitness records of food handlers and water testing reports were not available. Minor pest activity was also reported.
The restaurant received a hygiene score of 140 out of 196, or 71%. Officials said an Improvement Notice would be issued and immediate corrective measures had been directed.

Samples collected from bakery unit
Inspectors at Bake Max Foods (Brown Bear) in Kukatpally found that food handlers were wearing aprons and hairnets and maintaining basic personal hygiene.
The team, however, observed that eggs used for baking were stored without proper cleaning. Cockroach infestation, rusted baking trays, slippery flooring and pigeons in the raw material storage area were also noted. Finished products lacked manufacturing and expiry date labels and carried only batch numbers.
Food samples were collected and sent for laboratory analysis. The establishment scored 71 out of 92, or 78%, in the hygiene assessment. A Show Cause Notice will be issued and the management has been directed to improve hygiene, storage and labelling practices.

Kitchen operations halted at Bahar Cafe
The most serious violations were recorded at Bahar Cafe in Madeenaguda, which scored 38 out of 96, or 40%, in the hygiene assessment.
While the outlet had a valid Food Safety and Standards Authority of India (FSSAI) licence on display, inspectors found water accumulation near the RO dispenser, poor kitchen hygiene, open drains, food waste accumulation and inadequate lighting. Prepared food items lacked labels and date markings, and medical fitness records of food handlers were unavailable.

Officials also noted that cooking and drinking water had not been tested and that the staff toilet door remained open near operational areas.
CMC issued a Show Cause Notice and instructed the Food Business Operator to suspend kitchen operations until cleaning and corrective measures are completed. Immediate compliance with food safety norms was also directed.
The corporation said it would continue regular inspections to improve hygiene standards and protect public health across Cyberabad.
